Weekly Meal Planning

Monday- Nanny's
Tuesday- Warm Butternut Squash and Chickpea Salad with toasted pita 'croutons' over fresh baby spinach
Wednesday- Leftovers
Thursday- Greek Scampi*. I've never made this before. We shall see if its any good.
Friday- Turkey Meatloaf over sauteed greens and some other veggie

* Recipe

2 cups diced tomatoes
1 cup reduced fat crumbled feta
1 tsp olive oil
4 wedges yield lemon juice
5 cloves garlic
1/2 cup parsley
2 lbs shrimp
4.5 cups of dry pasta

Pre-heat oven to 400 °F.
Heat oil in a large Dutch oven over medium heat.
Add garlic, sauté 30 seconds. Add tomatoes and 1/4 cup parsley.
Reduce heat, simmer 10 minutes. Add shrimp, cook 5 minutes.
Pour shrimp mixture into a 13 x 9" baking dish; sprinkle with cheese.
Bake at 400 °F for 10 minutes. Sprinkle remaining parsley, lemon juice and pepper.
Serve over your favorite pasta.
