Tuesday- Lentil soup (I found a good recipe in Martha Stewart. If it comes out good, I'll post the recipe.)
Wednesday- Breakfast burrito
Thursday- Turkey Meatloaf and salad
Friday- Seafood Stew*
4 cups of vegetable broth
4 fl. oz white wine
1/2 c. of clam juice
2 cups of chopped onions
4 cloves garlic, minced
1 1/2 cups of diced tomatoes
2 cups of raw spinach
1 cup of chopped green or red pepper
16 oz. white fish, chopped into small pieces
12 large shrimp
3 sprigs of parsley or cilantro
salt and pepper to taste (do this at end b/c fish and clam juice will be salty)
Saute the onions for about 2 minutes. Add the garlic and green pepper.
Add the vegetable broth, white wine, diced tomatoes, and clam juice.
Simmer for a couple of minutes. Add in the fish. Cook for about 15 minutes.
Add in the shrimp and spinach. Cover and simmer for about 5 minutes.
Top with cilantro or parsley.
